Ingredients: brussel sprouts, baby spinach, pumpkin seeds (ideally styrian), olive or pumpkin seed oil, bacon or pancetta (unless vegetarian or vegan). All preferably organic....
Wash and slice Brussel sprouts. Broil with olive oil until slightly carmelized. Set aside.
Cook bacon/pancetta (if using. If not, you can replace with a tad of goat cheese or some "meaty" mushrooms, like shiitake (high in protein and fiber, also cancer fighting!). If using shiitake, remove stem, roast or sautee with minimal oil/butter.
Just before serving, toss spinach and broiled brussel sprouts, add bacon/mushrooms,top with pumpkin seeds and dress, not drown, with a splash of pumpkin or olive seed oil with or without mild balsamic or vinegar.
